Job Summary: The Kitchen Operations Manager oversees daily kitchen utility operations, ensuring smooth coordination of dishroom activities, cleaning, banquet food running, and supply management. This role supervises non-cooking kitchen staff, including dishwashers and kitchen helpers, and strives to improve guest satisfaction while maintaining budget goals.Responsibilities:
- Manage daily operations in dishroom, cleaning, banquet plating, and food running activities.
- Supervise kitchen staff, including dishwashers and utility workers, ensuring all tasks are completed efficiently.
- Order and maintain necessary supplies, equipment, and uniforms for kitchen operations.
- Schedule and manage kitchen activities, events,
and employee shifts based on business demands.
- Oversee maintenance and proper operation of kitchen equipment, and ensure prompt reporting of malfunctions.
- Ensure compliance with food handling, safety, and sanitation regulations, including employee certifications.
- Coordinate banquet food running and plating with Banquet Chef and staff, ensuring smooth service.
- Monitor inventories of kitchen supplies, including china, glass, silver, food, and smallware, reporting shortages as needed.
- Conduct routine inspections of equipment, work areas, and supplies to maintain service quality.
- Manage kitchen payroll, track employee time, and ensure compliance with labor and financial goals.
- Develop and implement processes to control expenses, meet budget targets, and optimize staff productivity.
- Lead the kitchen team, fostering a positive work environment that encourages collaboration, trust, and respect.
- Train, evaluate, and provide feedback to employees, ensuring ongoing performance improvement.
- Communicate regularly with peers and subordinates to align team goals and maintain operational standards.
- Ensure exceptional customer service by empowering employees and focusing on continuous improvement.
Requirements:
- High school diploma or GED required; 4 years of experience in food and beverage, procurement, or culinary-related roles.
- Alternatively, a 2-year degree in Hotel and Restaurant Management, Hospitality, or Business Administration with 2 years of relevant experience.
- Strong knowledge of kitchen operations, equipment maintenance, and inventory management.
- Ability to lead and supervise a team, including hiring, training, and evaluating performance.
- Experience managing budgets, payroll, and meeting financial targets.
- Excellent communication and leadership skills, with the ability to prioritize tasks and manage multiple responsibilities.
- Ability to lift and transport supplies and equipment, ensuring compliance with health and safety standards.
- Strong problem-solving skills and attention to detail.
- Willingness to work flexible hours, including evenings, weekends, and holidays.
