As the Pastry Chef de Partie, you are responsible in managing the day-to-day operations of the pastry and bakery section of the Central Kitchen. You have to prepare for the overall pastry needs of the restaurants and cloud kitchens. You must support the Executive Chef in developing high quality desserts and amazing new pastry recipes.
What you will do:
- Prepare wide variety of goods such as cakes, cookies, pies, bread, desserts, etc. following the company standard recipes and methods of production
- Ensure the highest quality of food production in the pastry section of Central Kitchen
- Monitor the adequacy of supplies in the pastry section and estimate the daily production needs
- Control food stock and food cost in the pastry section
- Follow proper handling and right temperature of all food products
- Supervise and coordinate all pastry and dessert preparation and presentation
- Comply with the regulations of safety and hygiene standards as per HACCP and Dubai Municipality guidelines
- Check the condition of the equipment and devices used for cooking
**Requirements**:
- You must have two to three years of experience as a Pastry Chef de Partie in a Central Kitchen, cruise ship or hotel big banqueting
- You must have strong background on large food production in the Central Kitchen
- Demonstrate a strong understanding on different pastry recipe and products
- You must have excellent skills in communication, leadership, problem-solving, and organizational
- You must maintain high standards of product quality, service, and cleanliness
- You must be able to multi-task, work under pressure, in a fast-paced environment
- You are currently located in the UAE and available to join immediately
