Job Summary:
We are seeking a skilled and passionate Pastry Sous Chef to lead the pastry section at Carbone within Atlantis, The Royal. You will be responsible for overseeing pastry operations, ensuring the highest quality of desserts, and delivering extraordinary culinary experiences for our guests. This role demands leadership, creativity, and strict adherence to safety and hygiene standards.
Responsibilities:
- Lead and manage the pastry team, ensuring seamless kitchen operations and consistent quality.
- Develop and create innovative pastry menus, keeping up with the latest trends and guest preferences.
- Oversee the preparation, presentation, and taste of all pastry items,
ensuring the highest standards of quality.
- Monitor inventory levels, order supplies, and ensure proper stock rotation to avoid wastage.
- Collaborate closely with the Executive Chef to design new desserts and improve existing recipes.
- Ensure all health, safety, and hygiene guidelines are followed according to both local regulations and internal standards.
- Train and mentor junior pastry chefs and kitchen staff, fostering a culture of excellence and teamwork.
- Manage daily kitchen operations, including scheduling, task delegation, and performance evaluations.
- Handle guest feedback and special requests related to pastry items, ensuring satisfaction.
- Participate in the planning and execution of special events, banquets, or themed menus that include pastry offerings.
- Conduct regular quality checks on ingredients and finished products to maintain consistency.
Requirements:
- Minimum of 3 years of professional experience in a pastry kitchen, preferably within a luxury hotel or fine dining environment.
- Proven experience in leadership roles, managing a pastry team in a high-pressure environment.
- Strong knowledge of pastry techniques, baking methods, and dessert presentations.
- Experience in diverse cuisines or specialized in specific styles of pastry.
- Excellent understanding of food safety regulations, hygiene practices, and kitchen organization.
- Ability to work under pressure, multitask, and meet tight deadlines while maintaining attention to detail.
- Strong communication skills and a collaborative approach to working with kitchen staff and other departments.
- Passion for innovation and a commitment to delivering exceptional guest experiences.
Level of Education:
Diploma in Culinary Arts, Catering,
or a related field.
Work Hours:
Full-time, with flexible shifts including weekends, holidays, and special events.
Experience in Months:
A minimum of 36 months in a similar role.
