As an Assistant Food and Beverage Manager, you are responsible for ensuring that all areas within the Food and Beverage department are properly managed in a structured and professional manner. You will assist the Department head in order to achieve the optimum performance of each operation outlet within the Food and Beverage department.

Responsibilities and Duties:

1. Establish and achieve department annual financial budget forecasts, meet monthly revenue and GOP targets by exercising a constant control of operational expenses.
2. Ensure that the entire department is complying with statutory standards as set for Hotel Classification.
3.





Attend and conduct regular departmental meetings and briefings to ensure an open communication line with team.
4. Update on all business and promotional activities of competitors and stay informed of changing trends.
5. Ensure that regular, ongoing communication occurs in all areas of food and beverage (e.g., pre-meal briefings, staff meetings, culinary team).
6. Work with direct reports to review business in house and potential business in surrounding area and troubleshoot potential challenges/conflicts.
7. Review staffing levels to ensure that guest service and operational needs are met.
8. Set expectations and hold food and beverage leadership team accountable for demonstrating desired service behaviors.
9. Provide feedback to employees based on observation of service behaviors.
10. Utilize employee feedback and an "open door" policy to identify and address employee problems or concerns in a timely manner.
11. Communicate critical information gained from pre- and post-convention meetings to areas of responsibility.
12.





Set goals and expectations for direct reports using the performance review process and hold staff accountable for successful performance.
13. Estimate food and beverage consumption in order to anticipate amounts to be purchased or requisitioned.
14. Develop and implement revenue boosting sales activities, together with other departments.
15. Control and approve departmental purchase requests and store requisitions for operating material, food products and beverages.
16. Monitor department duty rota to ensure efficient manning at all times.
17. Review and approve all payroll-related documents, at the end of the month prior to handing them over to Human Resources.
18. Initiate the Food & Beverage department Standards of Performance manuals and establish the supporting training program.

Conduct spot checks to ensure that all mise en place is done according to the full day service requirements.
20. Conduct sales analysis on every menu in operation with Executive chef.
21. Drive all menu changes, presentations, pricing and the print work with Executive Chef.
22. Work with accounts department to oversee physical inventories, analyze specialized reports, slow moving items and low stock list and productive norms.
23. Keep informed of competitive trends, new products and legislation.
24. Carry out all works as per the Department operations manual.

Additional duties and responsibilities:

1. Ensure integrity and confidentiality of information at all times.
2. Perform any additional requirements,





tasks and duties outside of your scope of work as deemed necessary by your Immediate Manager or the Management.
3. Changes in business may require alterations to this Job Description.

Care of Equipment

1. Ensure maintenance and careful handling of equipment used.
2. Ensure timely reporting of malfunction or maintenance deficiency to appropriate area.

Training and Employee’s Activities

1. Attend scheduled trainings.
2. Participate actively in company initiated employee activities.

Grooming and Hygiene

1. Adhere to the specified hygiene and personal appearance standards of the hotel and surrounding area.
2. Adhere to the set procedures for attendance and timekeeping.

1. Adhere to the provisions outlined in the Employee’s Handbook, Disciplinary Code, and Rules & Regulations.







Environmental Awareness

1. Reduce waste of supplies and materials by re-using or selling.
2. Recycle when possible.
3. Conserve water and energy by adhering to environmental/energy conservation checklist appropriate for the surrounding area.
4. Maintain clean surroundings.
5. Participate in activities concerning the protection of the environment.
